Rainbow Carrot Planting Instructions:
1. Timing: Carrots are cool-season crops. Sow seeds directly into the garden 3-4 weeks before the last spring frost. For a continuous harvest, sow a new round of seeds every 3 weeks until mid-summer.
2. Sowing: Sow seeds shallowly, about 1/8 to 1/4 inch deep, in loose, well-draining soil. Because carrot seeds are tiny, it helps to mix them with a little sand to ensure even distribution. Keep the soil surface consistently moist until germination occurs.
3. Care: To grow straight, beautiful roots, ensure your soil is free of rocks and heavy clumps. Once seedlings are 2 inches tall, thin them to 2-3 inches apart. Unlike "heavy feeders," carrots prefer soil that isn't overly saturated with nitrogen, which can cause the roots to fork.
4. Harvesting: You can begin harvesting "baby carrots" as soon as they reach your desired size, but for the best color development in a Rainbow Mix, wait until the shoulders are about 1/2 to 1 inch in diameter. Many varieties in this mix will taste even sweeter after a light frost.
5. Pests & Disease: Watch for carrot rust flies. Using row covers immediately after sowing can prevent these pests from laying eggs. Additionally, keeping the "shoulders" of the carrots covered with soil or mulch will prevent them from turning green and bitter.
