Pak Choi Planting Instructions:
1. Timing: Pak Choi thrives in cool weather. Plant in early spring as soon as the soil can be worked, or sow in late summer for a fall harvest. It can also be grown in partial shade to prevent it from "bolting" in warmer weather.
2. Sowing: Sow seeds 1/4 inch deep directly into the garden. Space seeds about 2 inches apart and thin to 6-12 inches once they are established, depending on whether you want "baby" or full-sized heads.
3. Care: Pak Choi needs consistent moisture to keep the stalks crisp. If the soil dries out, the plant may go to seed prematurely. Rich, well-draining soil with plenty of organic matter will produce the best results.
4. Harvesting: You can harvest individual outer leaves as needed for "cut-and-come-again" harvesting, or cut the entire plant at the base once the head has reached your desired size.
