Early Wonder Beet Planting Instructions:
1. Timing: Early Wonder lives up to its name by thriving in cool weather. Plant in full sun as soon as the soil can be worked in the spring.
2. Sowing: Sow seeds 1/2 inch deep. Since each "seed" is a cluster, you must thin the seedlings to 3-4 inches apart once they reach 2 inches tall to allow the roots to expand.
3. Care: Provide consistent water. Early Wonder grows fast, so it needs steady moisture to keep the roots tender and prevent them from becoming tough or woody.
4. Harvesting: You can begin harvesting the greens when they are just a few inches tall for salads. Harvest the roots when they reach 2-3 inches in diameter for peak sweetness.
5. Pests & Disease: Generally very hardy, but watch for leaf miners on the greens. Proper spacing and crop rotation will help keep your Early Wonder crop healthy and productive.
